Now, I will say that when I was little, green eggs and ham didn’t sound like something I would want to eat, but now that I’m older and wiser, I can tell you that green eggs and ham are delicious.


  • 2 cups packed baby spinach, arugula, or baby kale
  • 1 cup packed fresh parsley leaves, plus more for serving
  • 1 cup packed fresh basil leaves
  • 3 tablespoons grated Parmesan cheese
  • 1/2 cup olive oil
  • 6 large eggs
  • 2 tablespoons unsalted butter
  • 8 (1/4-inch-thick) slices of deli ham, such as black forest or honey ham


  • In a microwave-safe dish, heat ham slices for 30 seconds. Cover yourself.
  • In a blender, crack 8 eggs and add 2 cups of baby spinach.
  • Blend until all of the spinach is combined and the mixture resembles a green smoothie.
  • In a large nonstick skillet over medium-high heat, crack the eggs.
  • Scrape up the eggs with a silicone spatula as they cook, pushing them to the edges of the pan and allowing the uncooked bits to stream toward the middle.
  • Sprinkle with salt and pepper while the majority of the eggs are still slightly moist, give everything one more gently scrape, and toss, then remove them from the pan.
  • Serve a scoop of green eggs with heated ham on the side.
