Now, I will say that when I was little, green eggs and ham didn’t sound like something I would want to eat, but now that I’m older and wiser, I can tell you that green eggs and ham are delicious.

INGREDIENTS

  • 2 cups packed baby spinach, arugula, or baby kale
  • 1 cup packed fresh parsley leaves, plus more for serving
  • 1 cup packed fresh basil leaves
  • 3 tablespoons grated Parmesan cheese
  • 1/2 cup olive oil
  • 6 large eggs
  • 2 tablespoons unsalted butter
  • 8 (1/4-inch-thick) slices of deli ham, such as black forest or honey ham

HOW TO MAKE GREEN EGGS AND HAM

  • In a microwave-safe dish, heat ham slices for 30 seconds. Cover yourself.
  • In a blender, crack 8 eggs and add 2 cups of baby spinach.
  • Blend until all of the spinach is combined and the mixture resembles a green smoothie.
  • In a large nonstick skillet over medium-high heat, crack the eggs.
  • Scrape up the eggs with a silicone spatula as they cook, pushing them to the edges of the pan and allowing the uncooked bits to stream toward the middle.
  • Sprinkle with salt and pepper while the majority of the eggs are still slightly moist, give everything one more gently scrape, and toss, then remove them from the pan.
  • Serve a scoop of green eggs with heated ham on the side.

The Benefits of Cooking with Turmeric

Turmeric is one of those ingredients that not only adds an impressive pop of color to a dish but also a bit of flavor. Sure, it might be hard to get your kids (or partners) on board with adding more spice to their meals but turmeric might actually help aid digestion and increase energy levels, so maybe just mention those perks. Plus, it’s really good in baked goods like these green egg-and-ham muffins!

TIPS FOR MAKING GREEN EGGS AND HAM

Don’t turn the heat up too high. A high heat setting causes scorched eggs and burned spinach. You’ll need to turn the stove to medium-high when using gas instead of electric, which may require using medium or medium-low.

Adjust the spinach amount as needed. This recipe is very adaptable. You can use as much as 1 cup of loosely packed baby spinach per egg. Additionally, you can use less spinach than what the recipe calls for. If you don’t like the spinach taste, add a little sprinkling of grated parmesan when you add salt and pepper.
